Cut the puff pastry sheet into four equal squares and line each on a baking sheet covered with parchment paper.
Core the apple, then slice it into thin rings. Toss the rings in a bowl with the sugar and cinnamon until they’re lightly coated.
Place a few apple rings in the centre of each pastry square, then add a small dollop of jam on top of the fruit.
Bake the pastries in a pre‑heated oven at 200 °C (400 °F) for about ten minutes, or until the pastry is golden and the apple is soft and caramelised. Let cool briefly before serving.
